Let’s dive into my chicken selection and where I purchase my chicken from. Years ago, as an Early Educator, I met a woman with more energy than me. Every day, she trusted us to care for her daughter. Our conversations grew, and we became closer. We had many things in common, but what I quickly realized was that her love for her family was also expressed through cooking and serving with love.
As we shared information over the years, our conversations became more personal. Finally, she said, “I am going to take you to a place in Timberville where I buy chicken.” As we traveled off the highway, then the main road, and finally to a gravel road leading to a small building on a rocky parking lot, passing all local food chains, I thought, “Oh Lord, where are we going, and what do I really know about this energized woman anyway?”
She parked her car and said, “Okay, let’s go in.” I replied, “Girl, you know how crazy this place looks to me.” She said, “Either you want the best-tasting chicken for an inexpensive price, or you don’t. Now, get out of the car. So I trusted her instinct and I have shopped this establishment for the past 17 years. I am happy to say Barbie Obrien is still a dear friend. Angie's Tasty Baked Chicken Recipe
Preparation:
Wash the Chicken:
Ensure no feathers are remaining.
Clean the inside of the chicken, removing any extra skin or loose items.
Set the chicken on a clean cutting board to dry.
Gather Seasonings:
Use the following to taste:
Coarse Black Pepper
Seasoning All
Fresh Garlic
Diced Red Onions
Diced Yellow Onions
Paprika
Butter
Chicken Bone Broth
Preheat Oven:
Preheat the oven to 350°F (175°C).
Seasoning the Chicken:
Internal Seasoning:
Tuck seasonings inside the chicken:
Fresh Garlic
½ stick of butter
Half of the diced red and yellow onions
Additional seasonings as desired
Under the Skin:
Rub softened butter under the top layer of the chicken’s skin.
Use half of all other dry ingredients under the skin.
Outer Skin:
Spread the remaining half of the dry ingredients on the outer skin of the chicken.
Cooking:
Prepare for Roasting:
Place the chicken into a roasting pan.
Pour chicken bone broth inside and over the chicken.
Bake:
Bake in the preheated oven for 4 to 5 hours.
Every hour, open the oven and baste the chicken with chicken broth.
Making the Gravy:
Use the extra chicken broth after the chicken is done to make gravy.
